it doesn't need to be man and woman anymore. Remember same-sex marriages are now also legal in Thailand.

In theory is better if you "leave", which can be as easy as hoping on a short bus or boat ride and then enter again.

Can I apply for a visa at the HCMC consulate in person instead of online?

There's no choice, when online they won't even open the Embassy gate if you try to go (unless you're a Thai citizen needing consular assistance). I know because in my country it's been online like since forever. You can't pay a visit, and you'll be even lucky of they take the phone.

You're supposed to input those, yes, and the intended entry date CAN'T be beyond 3 months in the future.
