However, I am being asked to provide my flight number and accommodation details, but I was planning to book these after receiving my visa. Is it normal to have to provide this information at this stage of the application?

You can book a hotel on Agoda with free cancellation until almost day of arrival. I just booked today for Chiang Mai from 10th February. I can cancel until 8th for free without penalty
