Impossible to answer that in January, you will have to check that closer to your travel date, but at this stage there hasn’t been any date fixed for the implementation of the ETA.

You will receive a 60 day visa exempt stamp each time you enter Thailand, but be aware the extension is only 30 days not 40 like you mentioned.

Jomtien immigration can be difficult sometimes so as a precaution do 2 copies of everything also it doesn’t hurt to photocopy your information page of your passport and also your latest entry stamp as well, just in case.
