Quick update that the Taipei embassy is open again as of Friday, 10/4. Our paperwork was submitted for review this morning. Fingers crossed!
UPDATE: Visa paid and approved today. Pickup for our passports is on Monday - so it's a two-day process. Feel free to ask questions in the comments.

I applied in Singapore with a two-week cooking course, but unfortunately, they rejected me. I'm considering doing it in Taipei next, though I'm not sure if they will accept my two-week cooking course there.
Are you bringing any dependents? We need to request a dependent visa as well.
I applied via the 'digital nomad' path with my wife as a dependent. So sorry that you were rejected in Singapore. Worth a shot to try again elsewhere I would say.

How many months of banks statements did you show, is 3 months enough?
If it's you and your wife applying together, be sure to bring the original copy of your marriage certificate. They wanted to see ours, not just copies as indicated on their website.
