you need 400.000.- THB in your Thai bank account in your sole name, and on the day of application to the "1-year extension of the stay permit", the money must have seasoned for two months. On some Immigrations they ask for a 3-months seasoning

You can’t do it . For your first year you will have to have 400k baht minimum in your account 2 months before the application date. For subsequent years you MUST have a minimum of 40k baht transferred into your account for 12 consecutive months before you apply and continue infinitum
For the 40k/month transfer method you'd need to check with your Immigration Office well in advance if they accept this as many don't, only 40k income earned in Thailand
I'm a bit confused, you're saying the 40k has to be earned in Thailand, how do you earn 40k in Thailand? I'm not there full time yet and planing either later 2025 or mid 2026.

You cannot as the British Embassy no longer offers that service for applications in Thailand. Your only option is to have 400k in a Thai bank account for the in country application.

they told you this because citizens of other countries get income affidavits ("pension confirmations") from their embassies. But YOUR embassy doesn't issue it any more. That's why you must use the 400.000 THB deposit, at least in the first year until you have gathered 12 consecutive months of 40.000.- THB transfers from abroad into your Thai bank account (not guaranteed if your Immigration will accept it = see John Stanners' argument)
I'm not sure what context they said this in? Were they just wanting to confirm the source of your money? Do you have a full 12 months of transfers into your thai bank account from overseas?
A number of immigration offices will now only accept 40k per month if it is earned inside Thailand but it doesn't sound like that is your issue
