For the O-A health insurance, do I have to buy it for the whole year? Or can I purchase enough to get there and then check into it further when I am in Thailand?

The O~A you’ll need it for as long as your stamped in for the non~O isa better option at the moment

When you enter your stamp will only be for the length of your insurance so if you get 3 months thats all you will get. You can get insurance later and extend but this has to be done at an airport immigration not a normal immigration office
Its much easier to get the insurance for duration before you arrive
