Let's say my Thai Visa expires on the 2nd of November 2023.
If I enter Thailand on the 30th of October, do I have to leave by the 2nd November, or do I get 30-60 days from the 30th of October as will enter before my Visa expires ?

TLDR : Answer Summary
If you enter Thailand before your visa expiry date, you will receive the full duration of your visa upon entry, regardless of the expiry date. For example, with a single entry tourist visa, even if you enter on the last permitted day, you are entitled to the full 60 days.
If you have an unused(valid) visa to enter Thailand with, you need to enter the country by the end date on the visa.
Once you enter you'll be stamped in for the full amount of time the visa normally provides. There are no 30 day visas so you won't be stamped in for 30 days.
If you have a single entry tourist visa you purchased from a Thai embassy before you traveled to Thailand it will be valid for 90 days from the day it was issued.
"Visa must be used by" and even if you enter on the last day you'd get the full 60 days for a tourist visa.
