Depends how organised you are. You need to show money in a Thai bank and most immigration offices want to see that transferred from overseas. There's also a couple of offices that want to see that the money has been in the bank for 2 months before you apply. Other than that you're going to have some sort of long term accommodation sorted, it can be a hotel as long as you can show your booked for a few months

You can apply for a 90 days Non O visa in country if you arrive on a visa exemption or tourist visa if you fulfil the requirements and have minimum 14-21 days left on your stamp.

You’re biggest issue is to open a bank account for banking the required funds, unless your embassy still offers to give you an affidavit letter regarding income.

No, the easiest thing is really to apply for a 90 days Non O online at home before you come if that’s an option. Then you can use income or funds, and you’ll do everything more easy for yourself and just can prepare for the one year extension of stay within 90 days if that’s what you plan to do.

If you already have the required money in the bank on the day you arrive, and have all the required documents and money ready, you can go to your immigration office any day you'd like. Because you're changing to a different type (tourist to non-immigrant) you'll forfeit the remaining time on your entry stamp.

Not to apply for an in country Non O. For almost every office that only needs to have been in for 1 day. Some require to see that it’s an international transfer.

Jomtien require it seasoned for 2 months prior to application.

to apply for conversion to non-O visa there is no seasoning. Only Pattaya requires that and it's 2 months, not 6.

Every other office you just need to show the money. It's the extension that requires 2 months seasoning
