Is the following plan possible given the latest regulations? At what points will I need to provide proof of onward travel, and can I do that without booking any additional flights besides my final one? (I'm a US passport holder. I've always left Thailand within 30 days so never needed to deal with this stuff.)

End of Sep • apply for 60-day visa in Hanoi, having booked a flight out of Thailand on 19 Feb

24 Oct • arrive in CM from Danang with 60-day visa

21 Dec • do Mae Sai visa run by bicycle (as part of a Chiang Rai / Doi Angkhang loop)

You might need proof of onward travel when you buy the tourist visa (but that's totally dependent on what thai consulate you're using). You won't need it for your 30 day extension, or when you bounce out and back in at Mae Sai

You're genuinely travelling which includes a border hop and you have a flight out afterwards, you should be fine. Just provide your itinerary to the embassy if they ask

Fake flights = Fraud, if you are found to be engaged in fraudulent activities on your visa application, you could find yourself in serious trouble and banned from using that embassy again.
