My first 180 days will expire on January 27th. Can I simply leave the country and come back in and get a new 180 days?
Suppose I left on January 24th and came back in on January 25th, would I get a new 180 days from January 25th? Or would my old visa hold precedent and it only give me the remaining 2 days left on that visa?

You can simply go to your local immigration and get another 180 days
immigration will likely ask for all new documentation. If you look up YT video by the Thai govt official. Embassy's and immigration are separate entities. Best exit and re-enter.
might not be simple, as you'll need to pay. True that going abroad is not free either, but if arrange as part of a business of family trip, it means no extra charges.
