If I wanted to extend my time in Thailand for more than 30 days, would this be possible to do in Thailand? Or do I need to apply for a tourist visa before I arrive?

If you know you want to stay longer than 30 days already then you may as well get a tourist visa and save yourself a trip to immigration. It's e-visas now so you don't even have to worry about sending your passport off. I think the cost is cheaper as well, especially when you factor in travel to immigration
unfortunately not e-visa for everyone. I am British, have lived in Malaysia for 10 years and the checklist for application for tourist visa states I have to apply through Thai Embassy or Consulate .
Do it in Thailand immigration they'll give you another 30 days.

If you enter on 30 days visa exempt you can extend this for 30 days at immigration office for 60 days stay. Or get TR60 visa before you go to Thailand and can extend also for 30 days giving you 90 days stay
