I've been in Thailand comfortably more than 180 days.

I never heard about this concern before but seems its a big thing at the moment.

I am flying out to Macau on Friday and planning to return the same day. I'm flying in to (and out of) Chiang Mai and landing around 23:00.

I'm definitely going to take the 20k Baht in cash with me. Still, am I completely screwed or do you guys think I will make it back into the country?

If they don't allow me back in, what are my options? Can I then still get a tourist visa or do I need to do something else to get back in? Ed visa?

UPDATE: got proof of onward travel, will take the 20k cash and rental receipt along. Seems that,, and not looking like a vagabond is the best I can do.
