Is there any reason why people opt to go to an embassy in person rather than doing the e-visa application?

TLDR : Answer Summary
The preference for in-person embassy visits over e-visa applications can stem from concerns about ensuring all paperwork is correct before payment. Since all Thai visa applications have shifted online as of January 1st, some individuals previously favored physical applications due to the ability to confirm document accuracy beforehand, which prevented unnecessary fees if their application was incomplete. Additionally, some embassies set specific rules that may still require personal visits for certain procedures.
Since Jan 1st all Thai visa applications are online. Possibly the main reason people chose to do the application in person when that choice was available, is that the paperwork was handed in and checked before the fee was paid, so you only paid the 10,000 baht if the paperwork was approved beforehand.
