I am looking to stay in Thailand for about 8 months. I'm fine with flying in and out of the country for renewals and such. I also would like to learn some Thai, what visa would you suggest?

The METV gives you almost 9 months and likely easiest answer for your plan.

If you do plan to travel to neighbouring countries, it’s also no problem as you will get 60 days every time you enter Thailand. And each entry can be extended in country for 30 days for 1900 baht. Enjoy!

Well guess you can enter on visa extempt then find a school and they help you convert your visa to Ed and that gives you around 15 months total.
