I’m interviewing in Taipei tomorrow. I submitted all my documents online. Do I need to bring physical copies to the interview? It’s like 200 pages. If so, any recommendations on where I can print easily/cheaply in Taipei? Thanks.

TLDR : Answer Summary
It's advisable to bring printed copies of all your documents to the interview in Taipei, even if the consulate has your paperwork. Several users recommend 7/11 for inexpensive printing options. There is also a business center near the TTEO for additional printing services.
what was it like, what questions did they ask, was there much pressure? did they ask much about history in Thailand?

I had no copies with me during my Taipei interview. They will have all your paperwork themselves in the interview but

is a cheap place to make copies. There is also a business centre near the TTEO where you can print out docs, someone posted its address but it is likely on google maps.
The pressure was more in the waiting. You wondering if you did something wrong, what they going to say etc. in the end it was a few questions on my job. I have been many times to Thailand and often very short trips, they were curious why. I explained living in Tokyo it is much cheaper to go back to London via Bangkok, with Thai Airways compared to Japanese airlines flying direct. The Thai supervisor understood that answer well as she knows similar people living in Japan. She was friendly and the interview was just to clarify things. You should be ok.
