TLDR : Answer Summary
When applying for a one-year extension retirement visa in Thailand, bank statements can be in either Thai or English. While there is no strict requirement for one language over the other, having the statements in Thai may facilitate the process for the immigration officer, making it easier for everyone involved.

There is no requirement between English and Thai, it just makes it easier for your immigration officer if they're in Thai, and it's easier for your bank too. The easier it is for those involved the less needless hassles you'll face then and in the future.
