Might be a silly question or a good question, I like to be prepared in advance. I imagine some STV holders will now have some experience at Thai immigration. 

I’ve got the STV, I’ve been thinking about what will be required to get my extension. However, I won’t be staying for the full 3 months (planning to stay in the country 5 months total) , and my flight home, insurance and hotel bookings show this. 

Will they still give me the stamp of approval even if I’m not staying for the full length (3 months) of the extension...?

Someone posted a few days ago about extending STV. Immigration wanted the whole dogs bollocks. Insurance for Covid, proof of accommodation for the next 90 days. They checked for a whole lot more but I can't remember what it was

I could provide all that, but my flight home will be after 60 days of the 90 day extension, and all my bookings (health insurance, accommodation) are up to that date, so was wondering if they’d kick up a fuss about my bookings not covering the full 90 days.

I thought maybe if I show them my flight home, it might help with my situation...?

Shouldn’t be a problem since the minimum requirement is for the initial 90 days. You’ll get 90 more on your first extension.

When you go to get it ask if you need to cancel your visa before you leave (ie go to immigration the day before your flight to cancel it)

I was told that with my ED visa if I leave early I should go cancel it in case I ever come back to Thailand and want to study again. If I don’t cancel it I may not get another ED visa. But if it’s cancelled it shouldn’t be a problem in the future.
