My multi entry o-a visa runs out on December 14. This is the first time I have reentered with this visa. If I extend my health insurance till late July will my visa be extended to july at immigration Bangkok. I intend returning November 30.

for "run out" you need to enter Thailand before December 14th. Then you can stay for as long as you are stamped in for. Currently, depends on how long your Covid insurance cover is for.
I'm not sure what is the situation if you are already in Thailand and you go past your stamped in for, date. I suspect you have to try and renew visa in Thailand ( not sure if this is possible for OA) or swap to a different visa or extension. ๐คทโโ๏ธ That's my understanding of OA visa, but my current one, is the first time I've used this type of visa, so I'm not 100% sure exactly how it works.
