I entered Thailand on a visa on arrival for 30 days (UK passport)
I extended 30 days at Chaengwattana
Then I got a 60 day covid extension up to 12th May.
I have a flight booked back to the U.K. at the start of June
Can I apply for another 30 day extension?

No, you can only get once a 30 day Extension of Stay based on tourism when you enter Thailand without any visa.
You might apply for another 60 day extension of stay based on being unable to travel.
