I extended my tourist visa by 30 days on Tuesday this week but overstayed by 1 day (I was too sick on Monday to go to immigration) and as expected I had to pay the 500 baht fine. 

Now I want to apply for an education visa but have been told I need a new tourist visa due to the overstay? Is that correct, do I have any alternative options? I don't really want to leave the country unless absolutely necessary.

the muay Thai school said they asked immigration and showed them the photo of my 1 day overstay

My advice would be for you to go personally to immigration and to enquire yourself. There's enough anecdotal information in these groups that shows second-hand information is invariably wrong. The gurus who know about visas such as Stuart will always advise to ask at your immigration office, because that's the place which will say yes or no

That sounds strange. You’ve paid the fine, got an extension and now you’re on a legitimate stamp. There shouldn’t be an issue with getting an Ed visa. There isn’t a rule that states “if you’ve previously overstayed you can’t get one”. That said it’s up to the office you apply to. Some interpret things differently. Perhaps a border bounce might be your only option.
