I'm planning on visiting Thailand using a multiple entry tourist visa (METV) and using it as a home base as I visit other countries in Asia. The eVisa application asks for a flight confirmation for leaving Thailand. However, I don't plan on booking my other tickets until I'm already in Thailand. Is there any way around this? Thanks (FYI I'm a US citizen)

You will need to show PROOF of one flight from Thailand to a neighbor SE Asia country within the first 59 days of your arrival into Thailand. That shows the need for the METV.
