What should I do if my employer is not based in the UK for the Thailand 6 month multiple entry visa application?

On the list of requirements for 6 month multiple entry visa it asks for a letter from the applicant's employer based in the UK (I'm British). What if we are unemployed or employed by a company not based in our home country?
