If my school takes too long and I can't cancel my work permit and visa in time for my flight, will there be a problem for me? Would they stop me from going back to the USA?

It’s simply a letter stating your work is finished on X day. Surely they can type this out quickly.
absolutely if they say your last day is the 1st is ok too, you have till midnight on the 1st to stamp out of the country.

nope won't stop you from leaving but if/when you come back and were ever going to work here again you could have problems because you didn't cancel your Non-B extension before you left
