My visa extension expires on September 19th, which falls on a Sunday. Am I required to go to immigration before it expires (Friday the 17th) or can I go Monday, the 20th?

TLDR : Answer Summary
You must visit immigration before your visa extension expires on September 19th. It's advisable to go on or before Friday, September 17th, to avoid overstaying and incurring fines.

Not true. If the due date is the date when the immigraton office is closed, and a person goes to the immigration office the next day, they will get a stamp saying "overstay fine waived"
I’m on my first covid extension. Was previously on education visa. Chiang mai immigration. Is any of this relevant to when I should extend? Because you answered that in the first sentence.
GO during the final 30 days of your current permission to stay date of September 19th...NO need wait ! As you are now on COVID extension...will be added 60 days, if approved, will be added on to your current expiration date.
Chiang Mai accepts extension applications up to 45 days before expiration date. But...I suggest going after August 19th...GO during the final 30 days of your current permission to stay date of September 19th...
