You COULD take the thai birth certificate, the mother's thai i/d copy, her house book listing copy and go to the thai consulate in Savannakhet Lao and get a 90 day single entry Non-O visa based on being the father of a thai child born without being married to the thai mother for 2000 baht
That would give you 90 days and then you could get the 60 day visit thai family extension on that too for 1900baht at th immigration office and that'd give you 5 months in country. I know people who used to go get those 90 day visas every 5 months for many years because they did not hold legal parental rights so couldn't get anything in country other than the 60 day visit family extension (which you can only get one time per entry/visa)

If u didnt marry.Take birth certificate from local amphur also adress certificate.And if u can have copy id of your child take it.If possible take wife id card copy.And go to Savannakhet Embassy in Laos.Your visa will be 3months Non O dependant child.Then come back Thailand enter with it.After that before expiry 1 month if possible u must go to Amphur together with your child and wife.Then take that document from there.Go to Immigration.You can choose 2 options 1: 2 more months extension no need bank statement 400K thai baht 1900 baht pay u get 2months. 2: If there is 2 months before apply 400K in your bank account.U can get 12 months.
he can't get granted legal parental rights without going thru family court as the child is too young, he said the "baby's been born" so getting parental rights by the amphur is out

okay, lets sort this out.
There is no VISA you can get inside the country without being recognized as the legal father and being granted parental rights.
To get recognized as the legal father you have to go thru family court, and that takes about 6 months of time (mostly waiting for the hearing, your interview, the decision and then the decree to be issued) You and the thai mother of your child need to go to the family court office in the area where you live and see how you start the process.
Now you MIGHT <- (as in may be able to) get a 60 day visit thai family extension. And to see if you can and what's required you should go to the immigration office in your area with the thai mother, her i/d, her house book listing, the birth certificate and see if you can get that 60 day extension.
BUT
other than that you're not gonna get any visa inside the country based on being the father of a thai child born when you're not married to the mother.
you're NOT the legal father, you're just listed as the father on the birth certificate, that is not the same thing at all,
In thailand the rules are clear, foreign men who have children with thai women without being married are NOT granted parental rights in thailand.
Doesn't matter if you're name is on the birth certificate, doesn't matter if you get the child a passport from your country, you have NO legal rights to use the child to get a Non-O visa issued inside the country based on supporting a thai child.

As I said, you can go to the thai consulate in Savannakhet Lao and get the 90 day Non-O visa with just the documents I mentioned above when I told you about getting the visa there, but you can't get that visa issued inside the country on your own, not without being granted parental rights by the family court decree

To obtain a visa based on children born in Thailand to a Thai mother, a birth certificate is required. If you are still unmarried and want the yearly extension, based on children, you need to obtain paternity rights from your local amphur.

The only thing they could do would be get the 60 day visit thai family extension,
I did not say marry, I said legitimize. Read my post above how that can be done. Also, if you want to question the advice given here, maybe don't ask for it.
You can only use the amphur when the child is old/mature enough to state who their father is, before that the only options are marriage or family court.
