Can anyone give an example or any official form for invitation letter?! Asking because the embasy i am going to request my visa usually wants hotels booking for the entire time i am in Thailand - which is ridiculous. Or if you can give me another workaround will be great!

Write you own letter, inviting them. I know it sounds crazy but I had to do the same for my wife who is on a trailing spouse Non O visa. It worked with the Sydney consulate

Just a letter from your friend stating that they invite you to stay at their house from period xxx to zzz date should work.

Failing that use Agoda and book a cancellable hotel for the duration. Cancel once you have the visa.

 the problem is that they want us to send the documentation to the embassy at least a month in advance, is there any hotels accepting cancelations after its being booked for a month?

 Sure. Check the booking conditions at an hotel on Agoda many will let you book and are fully cancelable up to x days prior.
