Can anyone give an example or any official form for invitation letter?! Asking because the embasy i am going to request my visa usually wants hotels booking for the entire time i am in Thailand - which is ridiculous. Or if you can give me another workaround will be great!

TLDR : Answer Summary
The discussion explains how to provide an invitation letter for a Thai visa application to meet embassy requirements, particularly when hotel bookings are typically required. Suggestions include writing a simple invitation letter from a friend, using a cancellable Agoda booking, or creating a self-invitation letter. Successful examples note that such letters have been accepted by various Thai embassies.

Write you own letter, inviting them. I know it sounds crazy but I had to do the same for my wife who is on a trailing spouse Non O visa. It worked with the Sydney consulate
the problem is that they want us to send the documentation to the embassy at least a month in advance, is there any hotels accepting cancelations after its being booked for a month?
