ALthough you could be asked to show proof of what you put on the income letter is true (by pension letters, tax statements, bank balances) I have never seen a single person asked and have not been asked the last 9 years I've used the income letter for my yearly extensions.
, AFAIK, there are NO reports of any immigration office spot checking an income letter from any consulate. They are accepted at face value. If an office was doing this it would have swept the inter-web.
