TLDR : Answer Summary
You do not have to exclusively use the COVID insurance from the Thai Consulate's website to enter Thailand. It's acceptable to use insurance from other companies as long as it meets certain requirements. The insurance must specifically provide at least $10,000 coverage for COVID-19 and a certificate stating this coverage, as well as proof of COVID vaccinations. However, it is advisable to choose insurance from a Thai company for smoother acceptance by immigration authorities.
so if I use a vietnamese one, andthey change it to english or what not, then they will reject it? :/

I felt confused by contrasting answers so I just rang the thai embassy here and they said you were right. I would've done that the other day, but usually they never answer the phone here. Also, they said the Thai embassy can't approve entry at the moment. It has to go through CDC Thailand (Center for Disease Control prevention).
But thanks for the input guys. The policy just changes a lot.
He is not right saying this. I know people also enter without a Thai insurance. Most important is that the insurance clearly mentions Covid and the amount you are covered for.

You don't have to use the ones on the Thai pass site. Just make sure they're going to provide you with a document that clearly states $10k+ covid coverage.
